Of course, you can drop a stitch or 2 at the ends of the needles even if you're careful. I still prefer that over kitchener stitch, which I hate doing. i have not tried this, but am planning to try to turn the sock inside out before I do the toe shaping, still knit, but work from the inside, then it's already inside0out when I get there.
